Stag Lane Distillery, where family is the heart and soul

Dedicated to regenerative farming, the recently opened Stag Lane Distillery in Yarra Glen brings a fresh, new and vibrant perspective to the craft of gin making, with a ‘paddock to bottle’ philosophy. This family-run distillery, café and farm brings together a rich history in hospitality that has deep roots in soil health, hyper-local fresh ingredients, and flavours that linger on the palate.

On a hilltop that surveys 360 degrees of sunrise to sunset vistas across the green hills of the Yarra Valley, a regenerative farm spreads out across 88 acres of carefully monitored soil. Outlooks from the stunning barn-inspired, newly built café (a renovated packing and dairy shed) reveal more than 800 citrus trees, vegetable gardens, and a Truffiere planted with Italian Pine and French Oak in 2019, promising both white and black truffle production from 2026. Rows of botanicals such as junipers, sloe berries, finger limes, lilly pilly, and lemon myrtle, trace the contours of the garden beds that fringe the property.
